Stonerush Lakes welcomes new Head Chef

We have recently welcomed our new Head Chef, Callum Royle to the Old Mill at Stonerush Lakes. Born in Torquay, Callum moved to Cornwall in 2009 and his love of local Cornish produce developed into a passion to become a chef.
Callum started his career at Trawlers on the Quay, a fish and seafood restaurant in Looe and became Head Chef after a short period of time. Callum took the opportunity over the winter period when the restaurant was closed to work abroad to further his career and ended up spending 9 months in France honing his skills as a private chef.
Callum loves to surf and regularly eats out. His favourite restaurants include Paul’s Ainsworth at No6 in Padstow and the Barbican Kitchen in Plymouth.
Callum plans to create exceptional fresh seasonal dishes inspired by local produce, with the menu changing to reflect the time of year. Callum’s current signature dish is pan fried seabass with confit tomatoes, basil and salsa verde on a bed of asparagus (pictured below).
